About the Recipe

Organizing weekly meals in a practical and healthy way is often tricky, especially for those with a busy lifestyle who want to enjoy tasty, nutritious food even when on the go. That’s why today I’m sharing one of my favorite meal prep recipes: stuffed zucchini rolls. This vegetarian dish is balanced and complete, made with seasonal ingredients that are easy to find and quick to cook.
One of the great advantages of this recipe is that it can be made in large quantities and frozen without any issues, so you’ll always have a ready-to-eat meal available. Plus, if you have any leftover vegetable ragù, simply store it in the fridge and use it to dress a pasta dish in the following days, making meal prep even easier!

Ingredients

  • 3 large zucchinis

  • 200 g of vegetable ragù (made with vegetables like carrots, onions, celery, and tomatoes)

  • 100 g of mozzarella cheese

  • Extra virgin olive oil, as needed

  • Salt and pepper, to taste

Preparation

Step1

Wash the zucchinis and slice them thinly lengthwise, using a mandoline or a sharp knife. Grill the slices for 2-3 minutes on each side with a drizzle of oil and a pinch of salt until they’re soft and slightly golden.


Step2

Place a zucchini slice on a cutting board, add a spoonful of vegetable ragù. Gently roll the zucchini slice to form a roll. Repeat until all the ingredients are used.

and cover with mozzarella cheese on top.


Step3

Arrange the rolls in an oiled baking dish, drizzle with a bit of olive oil, and, if desired, a sprinkle of pepper. Bake at 180°C (350°F) for about 15-20 minutes, until the mozzarella is melted and the rolls are golden.


Step4

Remove the rolls from the oven and let them cool slightly before serving. They’re delicious both warm and at room temperature.
