Ingredients

  • 200g udon noodles

  • 2 tbsp peanut butter (creamy or chunky)

  • 2 tbsp soy sauce

  • 1 tbsp chili paste (adjust to taste)

  • 1 tsp sesame oil

  • 1 zucchini

  • 2 carrots

  • 1 tbsp tahini sauce

Preparation

Step 1

Cook udon noodles according to package directions. Drain and set aside.


Step 2

In a wok, cook the courgettes and carrots, keeping them crunchy.


Step 3

In a bowl, mix together peanut butter, soy sauce, chili paste, tahini, and a little water.


Step 4

Combine the noodles with the vegetables in the wok. Add the sauce and stir until the noodles are well coated.
