The Pumpkin and Broccoli Rabe Savory Tart is a dish that combines simplicity and creativity, making it perfect for showcasing seasonal ingredients. The sweetness of pumpkin pairs beautifully with the slightly bitter notes of broccoli rabe. Whether served as an appetizer for a special dinner or as a light main course, this recipe is a unique and flavorful way to bring more vegetables to the table with ease and style.

Ingredients

For the crust:

  • 200 g (1 ½ cups) all-purpose flour

  • 100 g (½ cup) cold butter, cubed

  • 50 ml (3 tbsp) cold water

  • A pinch of salt


For the filling:

  • 300 g (2 cups) pumpkin, peeled and diced

  • 200 g (2 cups) broccoli rabe, cleaned

  • 150 g (1 cup) soft cheese (e.g., taleggio, ricotta salata, or gorgonzola)

  • 1 clove of garlic

  • Olive oil, to taste

  • Salt and pepper, to taste

Preparation

Per the crust:


Step 1

In a bowl, mix the flour with a pinch of salt. Add the cold butter and rub it into the flour with your fingers until the mixture looks like coarse crumbs.


Step 2

Gradually add the cold water and knead quickly to form a smooth dough. Wrap it in plastic wrap and let it rest in the fridge for 30 minutes.


For the filling:


Step 1

Dice the pumpkin and cook it in the oven for 20min with a drizzle of olive oil and a clove of garlic until it softens. Season with salt and pepper and the herbs, then mash it into a smooth purée with a fork and mix it with the ricotta cheese and eggs.


Step 2

Blanch the broccoli rabe in salted boiling water for 3-4 minutes, then drain and sauté it in a pan with olive oil and garlic for extra flavor.


Step 3

Roll out the crust and place it on a baking sheet lined with parchment paper. Spread the pumpkin purée over the base, add the broccoli rabe on top, and finish with pieces of cheese.


Step 4

Fold the edges of the crust inward and bake in a preheated oven at 180°C (350°F) for 35-40 minutes, or until the crust is golden.
