About the Recipe

Whenever summer rolls around, I find myself craving light and fresh meals that don’t require a lot of time in the kitchen. This Orecchiette Feta e Pomodorini is my answer. It’s my secret to whipping up a healthy and balanced meal in no time. The sauce is ready by the time the pasta is done, and it’s perfect for enjoying both hot and cold. It’s now a regular in my lunchbox rotation, and I’m sure it will be in yours, too!

Ingredients


  • 250g orecchiette pasta

  • 200g cherry tomatoes, halved

  • 50g feta cheese, crumbled

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • Fresh basil leaves

Preparation


Step 1

Bring a large pot of salted water to a boil. Cook the orecchiette according to the package instructions until al dente.


Step 2

While the pasta is cooking, put together in a mixer the cherry tomatoes with feta cheese and lots of basil leafs and 2 spoons of olive oil.


Step 3

Add the cooked pasta to the sauce. Garnish with fresh basil leaves and some more feta cheese. Enjoy this dish warm, or let it cool and pack it into your lunchbox for a tasty cold meal.
