About the Recipe
For the past few months, I’ve been trying to learn German. But between work, home, and life, I often find myself with lessons scheduled right during my lunch break. On those days, I need a dish that’s super quick to make but still lets me enjoy the pleasure of a good meal.
That’s where my love for this Pasta Ricotta e Arancia comes in: in just 5 minutes, I can whip up something simple, delicious, and elegant—without sacrificing taste, even on the busiest days.

Ingredients
250 g fresh pasta
100 g ricotta cheese
Zest of 1 untreated orange
20g grana cheese
1 tbs olive oil
Salt and pepper
Preparation
Step1
Bring a pot of salted water to a boil and cook the pasta according to package instructions.
Step2
In a large bowl, mix the ricotta with the grated orange zest, grana cheese, olive oil, and a pinch of salt and pepper. Add a spoon of pasta water if needed to make the sauce creamier.
Step3
Drain the pasta (reserve a little pasta water) and toss it directly into the bowl with the ricotta mixture. Mix well to coat the pasta evenly. Add on top some orange zest for an extra touch.
