Ingredients
200g pasta
4 potatoes
1 onion
200g Provola cheese or any other melting cheese
1l di vegetable broth
olive oil
1 tbs tomato paste
Herbs to taste (bay leaf, rosemary, thyme...)
Salt and pepper
Preparation
Step1
Start by chopping the onion and sautéing it in a large pot with a drizzle of olive oil. Next, peel the potatoes and cut them into cubes.
Step2
Add the potatoes to the sautéed onion, toss in the aromatic herbs, and cover with vegetable broth. Let it cook for about 15-20 minutes. Then, you can add the pasta.
Step3
When the pasta is halfway cooked, add the remaining ingredients: the tomato paste and provola. Let it simmer until the pasta is fully cooked.
