Ingredients

  • 500 g (about 1 lb) stale Tuscan bread, unsalted

  • 800 g (about 1.75 lbs) ripe tomatoes, or use high-quality tomato puree

  • 1 liter (4 cups) vegetable broth (homemade is great, especially using leftover veggies)

  • 1 clove garlic

  • Extra virgin olive oil, as needed

  • A few fresh basil leaves

  • Salt and pepper, to taste

Preparation

Step1

If you're using fresh tomatoes, dunk them in boiling water for a few seconds, then drain, peel, and roughly chop them. If you're using tomato puree, you can skip this step and go right to the next.


Step2

In a large pot, heat a good drizzle of olive oil and sauté the whole garlic clove for a couple of minutes, just until it releases its aroma. Then remove the garlic.


Step3

Add the tomatoes to the pot, season with salt and pepper, and let them cook over low heat for about 15 minutes, stirring occasionally, until they soften and break down nicely.


Step4

Cut the stale bread into chunks and add it to the pot along with the hot vegetable broth. Stir well, letting the bread soak up the broth and blend with the tomatoes.


Step5

Let everything simmer over low heat for about 30 minutes, stirring often, until the bread has broken down completely, forming a thick, creamy texture.


Step6

Turn off the heat, tear in some fresh basil leaves, and add a final drizzle of olive oil on top. Serve the pappa al pomodoro warm, with a little black pepper if you like.
