Ingredients

  • 200g pumpkin

  • 150g potatoes

  • 80g type 0 flour (set aside a little if the mixture seems too loose)

  • Porcini mushrooms

  • Thyme, to taste

  • Garlic (optional)

  • Olive oil

Preparation

Step 1

In a pot of cold water, cook the potatoes and pumpkin until they are tender.


Step 2

Drain and mash the pumpkin and potatoes in a large bowl. Gradually add the flour and mix until you have a smooth dough.


Step 3

Shape the gnocchi and cook them in boiling water until they float to the surface.


Step 4

In a skillet, heat some oil and add the garlic, porcini mushrooms, and thyme. Cook until they are nicely browned. Drain the gnocchi and add them to the skillet with the mushrooms.
