About the Recipe

The stuffed potato frittata is a timeless classic that never goes out of style: crispy on the outside and super soft on the inside, with a creamy filling that makes your mouth water just thinking about it. It’s a simple and quick recipe, perfect for those moments when you don’t have much time (or energy) to spend in the kitchen but still want a tasty meal. It can be enjoyed hot or cold, making it ideal for picnics or outdoor trips. And honestly, who doesn’t love a nice slice of frittata with a gooey, melty cheese center?

Ingredients


  • 500 g potatoes

  • 4 eggs

  • 100 g semi-hard, melty cheese (such as provolone, scamorza, or well-drained mozzarella)

  • 2 tablespoons grated Parmesan cheese

  • Salt and pepper, to taste

  • Extra virgin olive oil, as needed

  • Fresh parsley (optional)

Preparation

Step1

Peel and finely grate the potatoes. Set aside.


Step2

In a large bowl, whisk the eggs with a splash of milk,

then add salt and pepper to taste. Mix in the grated potatoes and stir well.


Step3

Divide the mixture into two parts. Heat a little oil in a non-stick pan and pour in the first half of the mixture, spreading it evenly. Cook for about 5 minutes. Set it aside, and repeat the same process with the remaining mixture.


Step4

Once the base is cooked, add the cheese filling on top of the frittata in the pan.Pour the second half of the mixture over the filling, covering it completely. Press gently with a spatula to make sure the two layers stick together.


Step5

Let it cook for another 5 minutes, until both sides are golden and the frittata is firm.
