About the Recipe
Cheese focaccia is a quick and easy dish made of two ultra-thin layers of dough encasing a creamy cheese filling. The yeast-free dough is elastic and simple to work with, while the cheese melts beautifully during baking, delivering a burst of flavor. This recipe is designed for a round tart pan and is a perfect alternative to traditional focaccia, ideal for those looking to try something a little different.

Ingredients
For the Dough:
200 g Manitoba flour
210 ml water
20 ml extra virgin olive oil
8 g salt
For the Filling:
200 g soft cheese (such as stracchino, crescenza, or squacquerone)
Extra virgin olive oil
Preparation
Step1
In the bowl of a stand mixer, combine the flour, salt, and lukewarm water. Add the olive oil and knead on medium speed until the dough becomes smooth and elastic (about 7 minutes). Cover with a cloth and let it rest for 30 minutes.
Step2
Divide the dough into two parts, making one slightly larger (this will be used for the top layer). Place both pieces in the fridge to rest for about an hour.

Roll out both pieces of dough on a floured surface into very thin discs, slightly larger than your baking pan. Grease the pan with olive oil and lay the first disc of dough on the bottom. Spread the cheese in small pieces evenly over the surface, leaving a small border around the edges. Cover with the second disc of dough and gently press the edges together to seal.

Pinch the surface of the top layer with your fingers, drizzle with a bit of olive oil, and bake in a preheated static oven at 250°C (480°F) for 10-15 minutes, or until the top is golden and crispy.

I love cheese focaccia because it has everything I adore: simplicity, crispiness, and a filling that melts in your mouth.
