About the Recipe

When it’s game night at our place, you can always count on a few things: a house full of friends, lots of laughter, and, of course, some seriously good food. One dish that’s become a must-have for these fun-filled evenings is my Chili Veg. Not only is it super tasty, but it’s also a total lifesaver when you’re hosting. I can make it ahead of time, and trust me, it only gets better as the flavors blend together. Plus, it’s so versatile that it’s never the same twice. Paired with different sides or toppings, it’s always a crowd-pleaser that keeps everyone happy.

Ingredients


  • 1 bell peppers (red, yellow, or green), sliced

  • 2 carrots, julienned

  • 1 onion, thinly sliced

  • 125g red beans (or any other type of beans)

  • 40g tomato sauce

  • 2 tbsp olive oil

  • 1 tbsp cinnamon

  • 1 tbsp cumin

  • 1 tbsp chili pepper (optional)

  • Salt and pepper to taste

  • Fresh cilantro and sour cream (for garnish)


Preparation

Step 1

Start by prepping your vegetables—slice, dice, and chop until everything is ready to go. This dish comes together quickly, so having everything set out makes it a breeze. If you’re preparing it in advance, you can store the cut veggies in the fridge until you’re ready to cook.


Step 2

Heat the oil in a large pan or wok over medium-high heat. Add the sliced onions, garlic, and ginger, and sauté until the onions turn translucent, about 2-3 minutes.


Step 3

Toss in the bell peppers, carrots, and beans. Stir-fry on high heat for about 4-5 minutes, keeping the veggies crisp-tender.


Step 4

Add the tomato sauce and spices. Stir well to ensure all the veggies are evenly coated with the sauce.


Step 5

Once cooked, let the dish cool and store it in the fridge if you’re making it ahead of time. When you’re ready to serve, simply reheat and garnish with fresh cilantro and sour cream. Serve with warm tortillas or your favorite side.

Chili Veg has become a game night tradition at our house. It’s a dish that I know everyone will love, and it makes my life so much easier when I’m hosting. I can mix it up with different ingredients depending on what I have on hand, so it never feels repetitive.
