Ingredients
20 g all-purpose flour
50 ml milk
2 eggs
100 g fresh spinach (blanched and squeezed)
1 pinch of salt
Butter (as needed for greasing the pan)
100 g high-quality cooked ham
60 g provola cheese (or any other melting cheese of your choice)
15 g grated Parmesan cheese
Preparation
Step1
In a blender, combine the milk, eggs, spinach, flour, and a pinch of salt. Blend until the mixture is smooth and well combined.

Heat a non-stick pan and lightly grease it with butter. Pour a ladleful of batter into the hot pan, swirling it to spread the mixture evenly. Cook for about 1-2 minutes on each side until lightly golden. Repeat until all the batter is used.

Place a slice of ham and a slice of cheese on each crepe. Then, roll them up or fold them in half, depending on your preference.

Arrange the filled crepes in a baking dish. Sprinkle them with grated Parmesan cheese and dot with small pieces of butter. Bake at 180°C (350°F) for 10-15 minutes, or until they are golden and bubbly.
