About the Recipe

This soft lemon cake stands out for its incredibly tender texture and the fresh, aromatic flavor of lemon. Thanks to the use of whipped egg whites, the batter is particularly light and airy, while the combination of sugar and lemon zest creates an enveloping fragrance. Once baked, the bundt cake is perfect on its own or can be enhanced with a lemon glaze that amplifies its freshness. A simple dessert to prepare, yet one that always delivers an extraordinary result.

Ingredients

For the Cake:

  • 3 eggs (separate the whites from the yolks)

  • 100 g of sugar

  • 100 ml of fresh lemon juice

  • 200 ml of milk

  • 100 g of butter

  • 300 g of all-purpose flour

  • 1 packet of baking powder

  • Zest of 2 organic lemons

  • A pinch of salt


For the Lemon Glaze:

  • 200 g of powdered sugar

  • Juice of 1 fresh lemon

Preparation

Step1

Separate the egg whites from the yolks and beat the whites until stiff peaks form, adding half of the sugar. In a separate bowl, beat the yolks with the remaining sugar until the mixture becomes light and fluffy.


Step2

Add the lemon juice, milk, and butter to the yolk mixture, stirring gently. Sift the flour with the baking powder and add it to the liquid mixture, stirring until a smooth batter forms.


Step3

Gently fold in the whipped egg whites, using a folding motion from the bottom up to avoid deflating the mixture.


Step4

Pour the batter into a bundt pan that has been greased and floured. Bake in a preheated static oven at 180°C (350°F) for 35-40 minutes. Perform the toothpick test to check if it’s done.


Step5

Prepare the glaze: In a bowl, mix the powdered sugar with the lemon juice until smooth and runny. Once the cake has cooled, pour the glaze over it.

On the weekends, when the rush of the week gives way to a calmer pace, I love treating myself to something special for breakfast. The soft lemon sponge cake, with its delicious glaze, is my morning comfort food: fragrant, soft, and fresh in flavor. Breakfast is my favorite meal, so much so that I could have it any time of day! During the week, I stick to my routine, but on weekends, I enjoy taking the time to make something sweeter. This sponge cake, with its lemon aroma filling the house and the sweetness of the glaze, is a treat I never get tired of.
