As summer rolls around and barbecue season begins, it’s time to bring out recipes that are both delicious and perfect for outdoor gatherings. These Lentils and Carrot Burgers are a fantastic addition to any summer barbecue. They’re not only packed with flavor but also provide a nutritious twist on the classic burger. Easy to make and even easier to enjoy, these burgers are sure to be a hit at your next cookout. Whether you’re hosting a big barbecue or a casual weekend grill, these burgers will impress your guests and keep everyone coming back for more.

Ingredients


  • 50g dry lentils or 125g cooked lentils

  • 1 cup grated carrots

  • 1 small onion, finely chopped

  • 1 clove garlic, minced

  • 1/2 cup breadcrumbs (or oat flour for gluten-free alternative)

  • 1 tsp ground cumin

  • 1/2 tsp smoked paprika

  • Salt and pepper to taste

  • 2 tbsp olive oil

  • 4 burger buns

  • Mayonnaise, rocket salad, tomatos and cheese (for garnish)

Preparation

Step 1

Chop the onion and garlic, then place them into a pan with a bit of olive oil. Sauté until soft. Add the grated carrots and cook until tender.


Step 2

Add the lentils to the vegetables and stir with vegetable broth until tender and most of the liquid has been absorbed.


Step 3

Tranfer the lentils and vegetables in a mixer. Add breadcrumbs, ground cumin, smoked paprika, salt, and pepper and mix until the ingredients are well combined and the mixture holds together. If the mixture is too wet, add more breadcrumbs until it reaches a workable consistency.


Step 4

Preheat your oven to 180°C. Shape the mixture into burger patties, about 1/2 inch thick. Place the patties on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until they are firm and golden brown.


Step 5

Serve the lentil and carrot burgers on buns with your favorite toppings (here I used homemade mayo, goat cheese, tomatos and rocket salad).
