About the Recipe

This apple cake was one of my grandmother's signature dishes, and every time I make it, I'm flooded with beautiful memories of family holidays. The aroma of apples and cinnamon filling the house feels like a warm, cozy hug. I think the cake is absolutely delicious just as it is in its simplicity, but if you want to make it even more special, you can serve it with custard or a scoop of ice cream. And if you prefer a completely vegan version, just swap the butter for vegetable oil and use any plant-based milk you like.

Ingredients


  • 3 large apples

  • 250 g all-purpose flour

  • 100 g sugar

  • 50 g butter (or 50 ml vegetable oil for a vegan option)

  • 3 eggs

  • 1 packet baking powder (16 g)

  • 1 teaspoon ground cinnamon

  • 120 ml milk (or plant-based milk of your choice)




Preparation

Step 1:

Preheat your oven to 180°C (350°F). Peel the apples, slice them thinly, and drizzle with lemon juice to prevent browning. Set aside.


Step 2:

In a large bowl, beat the eggs with the sugar until the mixture is light and fluffy.


Step 3:

Add the melted butter (or vegetable oil for a vegan version) and mix well. Then, gradually fold in the sifted flour, baking powder, alternating with the milk (or your choice of plant-based milk).


Step 4:

Stir in the cinnamon powder and mix until the batter is smooth. Gently fold in the apple slices.


Step 5:

Pour the batter into a greased and floured cake pan. Arrange the remaining apple slices on top and bake for about 40-45 minutes, or until the cake is golden and cooked through (you can do the toothpick test to check).


Step 6:

Let the cake cool on a wire rack. Once cooled, you can enjoy it on its own or with a side of custard or a scoop of ice cream for an extra sweet touch.

I love this recipe because it has a way of whisking me back to simpler times. Every time I bake it, I’m instantly reminded of those mountain holidays with my family, when, after a day on the slopes, my grandma would welcome me with a warm smile and her legendary apple cake. It’s super easy and quick, making it perfect for ending the day with a sweet, homey treat.
