Savory muffins are a versatile and delicious snack that works at any time of day. Whether served as finger food when catching up with friends, as a quick snack between meals, or as a light lunch, they fit easily into everyday life.

These savory muffins were almost a happy accident, but they quickly became a regular part of my weekly routine. One of those Sunday evening meal-prep habits that make the start of the week feel a little more organized, and a lot more enjoyable.
The first time I made them, I was simply looking for something to take with me to work as a snack. Something practical, not store-bought, that would keep well outside the fridge for a few hours, easy to eat on the go, and most importantly, genuinely good. Not just “good because it’s healthy,” but actually delicious. That part matters most to me.
I used ingredients I already had at home: zucchini, olives, cherry tomatoes, capers, and a generous handful of mixed seeds. When they came out of the oven, golden, fragrant, soft inside with a slightly crisp top, I knew immediately they would become a permanent part of my recipe rotation.
Ingredients for 8 muffins
230 g all-purpose flour (or whole wheat flour)
1 packet baking powder for savory bakes
2 eggs
150 ml milk
10 g extra virgin olive oil
Salt and pepper, to taste
Filling of choice (I used cherry tomatoes, olives, capers, and zucchini)
Mixed seeds (optional)
Method
Preheat the oven to 180°C (350°F), conventional setting.
Grate the zucchini and squeeze out excess moisture using a clean kitchen towel. This step helps keep the batter from becoming too wet and ensures the right texture.
In a large bowl, whisk together the eggs, olive oil, and milk until smooth. Sift in the flour and baking powder, then add salt and pepper. Mix just until combined; avoid overmixing the batter.
Gently fold in the zucchini, olives, cherry tomatoes, and capers. Spoon the batter into lightly greased or paper-lined muffin tins, filling each about three-quarters full.
Sprinkle with mixed seeds and bake for 20–25 minutes, or until golden. Check doneness with a toothpick; it should come out clean.
Let cool for a few minutes before removing from the tin. Store in the fridge for 2–3 days, or freeze once completely cooled.
