Savoury Muffins

These savory muffins were almost a happy accident, but they quickly became a regular part of my weekly routine. One of those Sunday evening meal-prep habits that make the start of the week feel a little more organized, and a lot more enjoyable.
The first time I made them, I was simply looking for something to take with me to work as a snack. Something practical, not store-bought, that would keep well outside the fridge for a few hours, easy to eat on the go, and most importantly, genuinely good. Not just “good because it’s healthy,” but actually delicious. That part matters most to me.
I used ingredients I already had at home: zucchini, olives, cherry tomatoes, capers, and a generous handful of mixed seeds. When they came out of the oven, golden, fragrant, soft inside with a slightly crisp top, I knew immediately they would become a permanent part of my recipe rotation.

Ingredients for 8 muffins

  • 230 g all-purpose flour (or whole wheat flour)
  • 1 packet baking powder for savory bakes
  • 2 eggs
  • 150 ml milk
  • 10 g extra virgin olive oil
  • Salt and pepper, to taste
  • Filling of choice (I used cherry tomatoes, olives, capers, and zucchini)
  • Mixed seeds (optional)

Method

  1. Preheat the oven to 180°C (350°F), conventional setting.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel. This step helps keep the batter from becoming too wet and ensures the right texture.
  3. In a large bowl, whisk together the eggs, olive oil, and milk until smooth. Sift in the flour and baking powder, then add salt and pepper. Mix just until combined; avoid overmixing the batter.
  4. Gently fold in the zucchini, olives, cherry tomatoes, and capers. Spoon the batter into lightly greased or paper-lined muffin tins, filling each about three-quarters full.
  5. Sprinkle with mixed seeds and bake for 20–25 minutes, or until golden. Check doneness with a toothpick; it should come out clean.
  6. Let cool for a few minutes before removing from the tin. Store in the fridge for 2–3 days, or freeze once completely cooled.

How to store the muffins

Savory muffins keep well in an airtight container at room temperature for 2–3 days. For longer storage, they freeze beautifully. To serve, simply thaw at room temperature or warm briefly in the oven for a freshly baked feel.
